Bologna? In Cup Form?

When I was around 11 or 12 years old, my Mom gave me a kids cookbook. Somehow, I've managed to hang on to it. It's stained, bent up, and missing the front cover, but for the most part... it's still intact. I was looking through it the other day and decided to whip up one of the recipes for the family. (I've been in a bit of a cooking rut lately, and have been trying to shake things up.) Brandon wandered in while I was preparing this culinary delight and said, "Bologna? In cup form? There's something just not right about that." I told him to just give it a chance. You never know, right? Russ and the kids looked a little nervous when they approached the table, but they were surprised to find that they liked it. Well, Russ and Jess liked it. Brandon stuck to his guns and had a bowl of cereal instead. He'll never know what he missed. If you are in the mood to shake things up at your house, then give this a try.



Eggs in Bologna Cups


Ingredients:


  • Pam cooking spray

  • 6 slices bologna

  • 6 eggs

  • 6 teaspoons milk

  • salt

  • pepper

  • paprika

Directions:

Heat the oven to 375 degrees. Spray your muffin pan and frying pan with Pam. Place 3 slices of bologna in the frying pan and fry until the edges curl and the centers puff up. Lift each slice with tongs and place into a muffin cup. Press down in the center, so that the slice fits into the cup. Repeat with the remaining slices. Break an egg into the center of each bologna slice to hold it down. Pour one teaspoon of milk over each egg. Sprinkle eggs lightly with salt, pepper, and paprika. Bake uncovered in the oven for 15 to 20 minutes, or until the eggs are set. Loosen each bologna cup with a knife and lift onto a platter with a spoon. Enjoy.


(This would make a great Halloween treat. If you had two on a plate, they would resemble eyes. Is is strange that this just occurred to me?)
